For a girl who has never seen Star Wars, I sure do find myself quoting Yoda quite a bit. In this instance, I’m speaking about my workouts / gym schedule. You’ll note that the ticker above is ratcheted up to 11… on the last day of January, I’m one measly workout away from meeting my goal for the month. Not a bad way to bring in the new year! And as I sit at my desk, knowing that I intentionally skipped this morning’s trip to the gym (that decision was made last night, around 11 PM, after a few glasses of wine and the realization that I was up WAY too late, and it was snowing, which would throw off my whole day), I have another decision to make: do I shoot for 12 or sit pretty with 11?
It isn’t a question of whether I CAN or not, but a question of whether or not I WANT to. Do I make the CHOICE to work out today? Do I find a way to sneak it in from the office, or before or after work? It is moments like these where the OCD-infused guy on one shoulder says “do it, do it, do it!” and dude on the other shoulder echoes the “kinder, gentler Jessica,” and says “eh, you did a DOUBLE workout yesterday – skip it and start the month fresh tomorrow.”
My weekend was an epic success, exercise-wise. We really didn’t have any plans, and I’m JUST getting over the tail end of this sinus infection, so bedtimes were early, sleep was sound, and workouts were plentiful. I was at the gym BOTH Saturday and Sunday, which is pretty much unprecedented for me. Saturday’s workout was nothing to write home about, but I went through the motions, checked the box, and ramped it up for Sunday – which was quite possibly the best workout I’ve had since my marathon training days. I was at the gym by 9 AM, and it was EMPTY. I scored rock star parking, stashed my stuff in a locker, and hit the elliptical machine – 75 minutes later, having spend 45 on the elliptical and 30 on the treadmill – I was on the strength training floor, and after about 30 minutes of strength training, BOSU, and stretching, I was back on the treadmill for a 5 minute cool-down, when I spotted my friend Mandi waving at me frantically from across the gym floor. After a very quick catch-up session, I was en route home for the best shower of my life.
I have no idea where that energy came from, but I went with it -- and given yesterday’s intensity, you can see why I’m leaning towards taking the day off today!
The rest of the day consisted of running some errands, quietly reading my new book, and making a delicious dinner for the Manfriend and I, and then staying up way too late for a school night.
So the gym question looms large… will she or won’t she – you’ll have to check back to see. But the great thing about this situation is that it isn’t a question of willpower, scheduling, or laziness – just which CHOICE I want to make. It isn’t like caving to my desires and ordering a pizza when I am too tired and stressed and hungry to deal with cooking. It isn’t like “oops, I ate too much cake and got too lazy for the gym,” it’s just a choice. Simple as that.
There is no TRY.

The Train That Leaves Tomorrow
...is a mile upon it's way.
It is only 10:30 AM, but feels like 2:30, probably because I have been up since 5 AM. But this morning was a success:
5:15: Alarm clock goes off in other room. After moments of laying in bed wondering what the hell that noise was, I sprang out of bed to make it stop -- turning on the coffee pot in the process. From there it was a whirlwind of putting on workout clothes, brushing teeth, gathering belongings, and starting the car. Made a smoothie (which stayed blissfully cold and icy in my 22 degree car, the perfect post-workout treat).
5:40: On the road to the gym.
5:50: Find rock star parking at the gym -- on the treadmill by 6 AM.
6:40: Cardio done (20 minutes treadmill, 20 minutes elliptical)
7:00: just finishing up my 20 minutes of strength training, BOSU ball work, and some stretching (about 400 calories burned, total, for my workout)
7:30: shower, dress, dry hair, slap on some makeup, hit the road
7:45: narrowly miss train and catch the 7:55 train instead
8:20: email my boss from the train, from my iPad, to say I'm on my way but will be a few minutes late (God, I love technology!)
8:45: after walking the 5 blocks from the train, navigating through Target HQ, grabbing a (very very large) cup of coffee, and taking the elevator up up up up up 27 flights, I arrive...
When is nap time?
Car is safely parked at the train station. Manfriend will meet me downtown in time for the Wolves game. Dinner, drinks, and a good time will be had by all, before I collapse into bed totally exhausted and ready to do it all over again tomorrow.
(Or To Morrow. Either way).

I started on a journey about a year ago to a little town called Morrow in the State of Ohio.
I've never been much of a traveler, and I really didn't know that Morrow was the hardest place I'd ever try to go.
So I went down to the station for my ticket and applied for tips regarding Morrow not expecting to beguiled. Said I, "My friend, I'd like to go to Morrow and return no later than tomorrow for I haven't time to burn."

I was so disappointed. I was mad enough to swear. The train had gone to Morrow and had left me standing there.That man was right in telling me that I was a-howling jay. I could not go to Morrow so I guess in town I'll stay.

5:15 wake-up call to get to the gym after working until 9 PM tonight. Midweek date night with the Manfriend to see the Timberwolves play tomorrow night downtown. Work projects going swimmingly. Temperatures hit mid 20s today, which felt like a freaking HEAT WAVE compared to last week. Gym bag, work bag, overnight bag all packed; lunch planned; I'll walk out the door at 5:40 AM with a smoothie and coffee in-hand.
Four more workouts after tomorrow to meet my goal (although I did get in a good walk today during lunch, it doesn't count towards my gym total).
Ready, set, go.

(Chicken Pot) Pie in the Sky
What do you do when the weather BEYOND freezing? Make comfort food, of course!
I've stolen / borrowed this recipe from my friend Virginia, whose blog you should totally read, not only because it is awesome, but because she is too -- Virginia was actually my favorite babysitter when I was a kid. Not only was she a super cool older girl who ALWAYS had big parts in the high school plays and musicals, but one time, she had BOYS over.
And that just sealed the deal.
Anyway, I think Virginia's version of this probably turned out better than mine, because I made the fatal mistake of not properly reading her directions. :-) Thus, my roux was too thick and I didn't have enough, and duh, the potatoes were hard as rocks. But it looks really pretty, so I'm posting my adventure anyway.
Ingredients:
Pillsbury crescent rolls
3 chicken breasts, baked
Roasted cauliflower (I probably would have skipped this, except that they were selling roasted cauliflower in the deli section of my local grocery store, and I bought some to have with dinner, and then decided to use it for this recipe instead
Potatoes
Mushrooms
Celery
Carrots
Tops of red, yellow, orange bell peppers (again, not necessary - but I'd been prepping vegetables all morning, and thought that it would add some nice color)
Scallions
Butter
Flour
5 oz can of evaporated milk
Boullion
Dried parsley
Paprika
Egg
PAM
For starters, I put my vegetables in the food processor (Can you tell I'm obsessed?), and gave it a whirl...
... while the chicken breasts baked...
There's the side view -- beautiful, eh?
Next up -- sprayed my ramekins with some Pam...
Cut up some potatoes (note: should have roasted these first!)
And mixed it all up in one bowl...
...after shredding the chicken, also in the food processor.
It was time to make the roux -- butter + flour...
...and then about 5 oz of evaporated milk, boullion, and dried parsley. I should have added about a cup of water here to thin it out, but I didn't -- thus, I didn't have enough "gravy."
I layered the vegetables and chicken in the ramekins, and topped each one with a large spoonful of the roux...
.. before using a large mug (Thank you Delta Gamma Pledge Class Formal beer stein), to cut out circles of Pillsbury Crescent roll dough.
I molded the dough over the top of each ramekin, brushed with an egg wash, and sprinkled parsley and paprika on top.
Aren't they so pretty?
This is the finished product, fresh from the oven!

...which really weren't that delicious, only because there wasn't enough sauc and the potatoes didn't cook through. They only require about 10 minutes in the oven, so that wasn't enough time to cook the potatoes although it definitely made a beautiful browned crust!
I wrapped the remaining four ramekins in press-and-seal paper and placed in zip lock bags and put in the freezer. Not sure how they'll freeze and reheat, but I guess we'll find out. Maybe I will have to nuke them first and then finish in the oven when I prepare them?

Foodie Friday: I Feel Like (Asian) Chicken Tonight. And Tomorrow.
**So needless to say, this week I have not been scampering out of bed to get to the gym, nor have I been working out in my very cold basement. BUT, yesterday morning, I woke up extremely well rested, thus about 20 minutes early. 20-30 minutes in the morning makes all the difference for me in terms of organization -- assuming I'm not getting up at 5 AM to hit the gym, it means I have time to THINK, to sit quietly with my thoughts and let my ideas and goals take shape.
What "took shape" yesterday was getting my dishes done, laundry organized, and dinner prepped so that after work I could very easily make a healthy choice without too much thought / effort. I had an INSANE day yesterday -- it started at 8:15 AM and I was literally in back to back meetings until 5 PM, with only a 40 minute break at 9 AM to produce actual work. The good news? The day FLEW by - I mean, I felt like I BLINKED and it was 2:30. The bad news? Even though I stayed until 6 PM, that meant only an hour and forty minutes to produce actual work, most of it between 5 and 6 PM when everybody that I needed to answer questions was gone! I digress -- the point? It was a crazy day, ideal for hitting the take out bar, but knowing I had a lovely meal planned at home made it easy to stay on track.
Yesterday morning, while I was getting ready, I baked some plain chicken breasts. Just threw 'em in the oven for 40 minutes while I went about my morning routine. When they were done cooking, I cut into chunks and placed in the food processor, along with some chopped up scallions, stuck it in the fridge and walked out the door. The plan?
Asian Lettuce Wraps
I added the can of sliced water chestnuts to the food processor* and gave it a whirl before pouring the sauce over the top and mixing again...
Put the mixture BACK in the saute pan to let it heat through...
Washed some beautiful butter lettuce... I've made this before with Just Plain Lettuce and I prefer the cool crispness, but it tears way too easily, so I thought I'd give this a try.
Poured a glass of champagne because, hey, why not, and to toast a successful day, and put my meal together.
I didn't have those crispy cellophane noodles so I just went with chow mein noodles...
...and served with a side of frozen egg rolls that had been hangin' out in the freezer.
The best part about making this meal in the food processor? Even though it was just 3 chicken breasts, it could have fed a crowd! I have enough for lunch today and possibly tomorrow too. Not bad.

Bad Carma Leads To Good Karma
So, for those of you who know me “in real life,” you know that my past decade has been riddled with car drama – a very little bit of it created by me, 99.9% created by another in my life, and all of it chaotic and frustrating. Because of this, I tend to COMPLETELY freak out when anything bad happens with my car – I imagine the worst case scenario, assume it is going to cost me thousands of dollars, and basically freak out. Rather than curling up into a ball and letting somebody else take care of it, I tend to go into “control freak overdrive,” where I attempt to manage every single detail and variable, even the ones I have no control over. I’ve often thought that my bad luck with cars was some sort of karmic retribution for the inconvenience inflicted on many, for so many years, by my, ahem, household (long story).
On Sunday night, my car died. It was the STRANGEST of circumstances. My gas light had come on, so I drove from my brother’s house directly to the gas station kitty-corner from my house – and while waiting in line to pump gas (because the other pump was broken), my car died. What? I mean, it was running perfectly fine and then just STOPPED. My first assumption was that I’d simply run out of gas, or that the battery died, but neither of those options made much sense. Fortunately, a very nice man who was pumping gas in front of me, pushed me in front of the pump so I could fill my tank. Yay! But the car still wouldn’t start. Boo.
He tried and tried to jump start my car to no avail – the battery was turning over, but not catching. Finally he pushed me into a parking spot, and I walked home.
Hey – if your car is going to die, that’s the way to do it: I was at a gas station/ service station within walking distance from my house, with a nice man there to help me.
Manfriend was out of town, so although I easily could have borrowed his car, that entailed getting a ride there and then swapping cars somehow before I left town for Green Bay on Monday (he returned from Vegas on Monday).
I was already “over it” this week – irritated that our travel schedules were going to keep us apart for a solid week, frustrated with the weather, and NOT in a good workout routine (as opposed to last week’s stellar performance).
So I called my Dad. Who was AT my brother’s house. My sister-in-law, as you know from previous posts, is on bedrest with Baby #2, and cannot drive right now.
So within 20 minutes, not only was I at home with my stalled car safely parked at a shop, but I had a warm SUV to borrow for a few days, until my car was fixed.
Hey – if your car is going to die, that’s the way to do it: I was at a gas station/ service station within walking distance from my house, with a nice man there to help me, and people who love my a short arms distance away, who provided transportation and help when I needed it.
Wait – it only gets better – I got the estimate from the shop (about $700 to replace the fuel pump and fuel filter), and immediately called the dealership. Since my car is a part of the Certified Pre-owned program, it came with a 2 year warranty which had not expired. I didn’t have high hopes, but it turns out that not only was the fuel pump covered by warranty, but so are the handful of OTHER things that were wrong with my car, unbeknownst to me. I haven’t picked my car up yet, but it should be done today – for a grand total of about 200 bucks.
Compared to the two THOUSAND I was imagining, this is a pretty small price.
And in the midst of all this car drama, my trip to Green Bay was cancelled – which means not only was I on the ground to deal with it, but got to spend last night and this morning with the Manfriend before he left on his second trip of the week, this time for work. Although our evening just consisted of watching TV and going to bed early, and our morning of getting him packed for his trip, it was nice to be able to reconnect for an evening mid-week.
So both my Carma and my Karma seem to be turning around this week – which is a happy development. Rather than flying home from freezing Packer-mania-infused Green Bay tonight, I’ll be attending Sesame Street Live with my brother and Abby – and hitting the gym tomorrow morning before work, rather than sleeping off my work-trip exhaustion.
It is Wednesday January 19th. That means I have twelve days to get in five workouts in order to meet my goal for the month.
It seems that for every action, there IS, indeed, an equal and opposite reaction: on the upside, perhaps my years of undeserved car drama have resulted now in years of car blessings and luck. On the downside, the last two weeks of overly-exceptional food and workout planning led to this week’s disrupted plans and schedule.
The trick is finding the balance that lies between; learning to recover quickly from the unexpected and go about your merry way. Let go of the rigidity and control, and just go with the flow, even when the flow doesn't go in the way you thougth you wanted.
You might end up pleasantly surprised.

Eggselent Thursday
I'm crunched for time so this is mostly gonna be a picture post --
This is how my day started out -- mug, courtesy of the BlogHer goodie bag in August...
Blue sky and scrapers of my beloved Mini-apple... taken from just outside my office as I left the building yesterday... Lordy, I LOVE working downtown on bright days like this!
This is the fruit platter that I keep on my counter - it is usually filled with bananas, apples, avocado, onion, tomato, garlic, and whatever else I have goin' on that doesn't need refrigeration... why did I post this? Because these clementines, garlic, and a package of scallions are all the produce I have left in my house, and after tomorrow I'll be out of dairy as well. The freezer still contains several main course / protein options (roast chicken, pork tenderloin, chicken marsala from Let's Dish), but over the past two weeks I've been working on simplifying my kitchen contents, which means using up EVERYTHING before buying new -- my fridge and cupboards have never been so bare, and it feels great to know that 1) I'm not wasting anything, 2) I'm being really efficient, and 3) I'll be able to do a proper and efficient restock this weekend.
On Sunday I prepped all my vegetables, fruits, and 5 days worth of main courses... packed them all into ONE bag and left it in the fridge at work -- so each day, all I"ve had to do is walk to the service room on my floor. This has helped immensely with my morning routine.
And the title of today's post? Well, I go through strange phases of "egg aversions," where I will eat eggs for breakfast for ages and then one day I"ll wake up and NOTHING sounds more disgusting than eggs. I've eaten a lot of eggs this week -- in fact, I just had an egg and cheese pita a few minutes ago -- and suddenly, the aversion has struck again. BUT -- it is well timed, because this morning's breakfast was the last egg in my container... so tomorrow, it is back to chobani, Fiber One, and fruit I go.
Last but certainly not least... Abby and I on Christmas morning. Note the matching red bows in our hair, and the fact that she is already brushing the hair of the doll I gave her, mere minutes after opening it. :-)

This is how my day started out -- mug, courtesy of the BlogHer goodie bag in August...
Blue sky and scrapers of my beloved Mini-apple... taken from just outside my office as I left the building yesterday... Lordy, I LOVE working downtown on bright days like this!
This is the fruit platter that I keep on my counter - it is usually filled with bananas, apples, avocado, onion, tomato, garlic, and whatever else I have goin' on that doesn't need refrigeration... why did I post this? Because these clementines, garlic, and a package of scallions are all the produce I have left in my house, and after tomorrow I'll be out of dairy as well. The freezer still contains several main course / protein options (roast chicken, pork tenderloin, chicken marsala from Let's Dish), but over the past two weeks I've been working on simplifying my kitchen contents, which means using up EVERYTHING before buying new -- my fridge and cupboards have never been so bare, and it feels great to know that 1) I'm not wasting anything, 2) I'm being really efficient, and 3) I'll be able to do a proper and efficient restock this weekend.
On Sunday I prepped all my vegetables, fruits, and 5 days worth of main courses... packed them all into ONE bag and left it in the fridge at work -- so each day, all I"ve had to do is walk to the service room on my floor. This has helped immensely with my morning routine.
And the title of today's post? Well, I go through strange phases of "egg aversions," where I will eat eggs for breakfast for ages and then one day I"ll wake up and NOTHING sounds more disgusting than eggs. I've eaten a lot of eggs this week -- in fact, I just had an egg and cheese pita a few minutes ago -- and suddenly, the aversion has struck again. BUT -- it is well timed, because this morning's breakfast was the last egg in my container... so tomorrow, it is back to chobani, Fiber One, and fruit I go.
Last but certainly not least... Abby and I on Christmas morning. Note the matching red bows in our hair, and the fact that she is already brushing the hair of the doll I gave her, mere minutes after opening it. :-)

Over The Hump
It's Wednesday - Hump Day - the day that marks the over-half-way-to-the-weekend-thank-you-sweet-baby-Jesus point of the week. 5:01 on Friday is in sight... and while I don't crave the weekends the way I used to (because I love my job instead of dreading it each day), I've got a fun weekend planned -- The Manfriend is jetting off to Vegas on Friday night with one of his best buddies, so I'm having a little bachelorette weekend... Friday night is dinner with the family to celebrate 90 years of birthdays: my mom's 60th and my brother's 30th. It was supposed to be for 120 years of birthdays, including my sister-in-law's 30th, but she is now unable to attend (more on that in a bit). 90 years of birthdays is still pretty impressive -- and as an adult, when I think about my mom delivering her second kid the day before her 30th birthday, it seems really a lot more special than it did when I was a kid and it was just kinda cool and funny that my brother and mother practically shared a birthday.
My weekend will continue with a trip to the gym on Saturday morning, possibly painting my kitchen, a massage / facial on Saturday, and a sushi dinner with some girlfriends. Sunday I might be watching Abby for a while, or just layin' around. But I digress... The real point of this post is not about parties and weekends, but the ticker at the top of my page, which as of this morning, flipped to 7. Over 50% of my monthly workouts are done, and that feels pretty fan-frickin-tastic.
I'm over the hump on hump day.
I've found a rhythm and a pattern to my new routine - one that works for ME and for the current way my life is organized.
5:30, blackberry alarm goes off. Immediately get out of bed and walk into kitchen. Hit the brew button on coffee pot, put on bathrobe and boots with the furrrrrr and go start the car. Come back in and put on gym clothes and HR monitor; brush hair, brush teeth while car warms up. Pour a thermos of coffee, take a sip, gather belongings, and hit the road. On the gym floor by 5:59 AM, and back on the road around 7:10, home to shower, eat, take a minute to gather my thoughts, and hit the road again.
Another hump to cross -- speaking of my sister in law -- not sure if I ever announced it here, but they are expecting their second child on March 26th -- yep, my sweet Abby is going to be a big sister to a little baby boy... but apparently the impatient Master Seaberg is as eager to meet us as we are to meet him (not shocking - Seabergs are NEVER late), and has been wanting to emerge into the world early... 26 weeks to be exact... so my sweet sis is on bedrest at home. She just cleared 28 weeks, and is under instructions to "stay bored" at home until a more appropriate date... although the goal will be to get as close to her due date as possible, I think that 31 weeks is "Hump day" in this situation -- so if you can please keep my sister in law and sweet baby boy Seaberg in your thoughts and prayers, that would be awesome.
Anyway, know what else has a hump? A camel -- and you know what camel's do? Store a lot of water. (And I juuuuuuuuuuuust realized this is totally a mixed metaphor that I should just quite writing right now because it actually doesn't work - camels store water and never have to drink it; I've been drinking H2O like it's my job, and peeing every 10 minutes). Point being - I've been drinking water like crazy and once again, it makes all the difference: more energy, better skin / nails / hair, and no diet-coke-induced heartburn!

Top Ten Tips for Morning Workouts
Today was the start of Week Two of morning workouts and I am happy to report that I popped right out of bed around 5:30 and was firmly planted on an elliptical machine by about 6:05 AM… after 35 minutes of cardio + strength + core, and a quick trip home, I was in the shower and on my way out again by 8:30 AM. Actually, I was on my way out by about 8:10 AM, but then realized I had forgotten the lunch + week’s worth of vegetables / hummus / fruit that I’d so carefully packed, so I went home to retrieve it.
“Jessica Going To Work: Take Two” occurred at 8:30 AM, after packing both our lunches, putting dinner in the crock pot, a killer workout, a proper burial of the mouse caught in a trap in my kitchen, a shower, breakfast, a broken coffee pot, and forgetting (then remembering) my lunch. Annnnnnnnnd scene!
(Sidenote: Is it really only 9:22 AM?? because I feel like I’ve already lived a full day. However, it makes me very happy to know that my meals are healthily taken care of for the entire day.)
I’ve been getting a lot of comments / questions lately about how on EARTH I can get up so early to work out – so I thought I’d use today’s post to share some tips and tricks for getting out of bed early enough to workout. I will preface this by saying that I’m already a morning person, so getting up early is probably much easier for me than for others – however, in the dead of winter in MN, I don’t really think it is easy for ANYBODY to get up in the dark of night and go into the cold world any earlier than necessary. So here goes:
1) Go to bed early, or at least get yourself on a schedule. When I was in high school, a sleep specialist came to speak to my health class, and I will NEVER forget the best piece of advice he gave us: yes, 8 hours of sleep is ideal, but what is MOST important is that you are on a schedule so that your body develops a rhythm of when to be sleepy and when to be awake. I’m a 10 to 6 girl – I get in bed around 10 and watch the news with the sleep timer on… this means that after 8 hours, I usually wake naturally around 6 or 6:30 AM. I set an alarm, but typically I wake up before it goes off. If I’ve slept well, I hop right out of bed – if my sleep was of poor quality, I hit snooze a billion times before getting up.
2) Do your best to find quality sleep. Don’t eat after 8:30 PM. Watch the alcohol and caffeine intake. Try to “unplug” about 30 minutes before bed (sidenote: this is the one I am TERRIBLE at – the only thing your bedroom should be used for is sleep, sex, and reading with an actual book, not an electronic reader… well, I am often in bed watching TV, and surfing the web while reading a book on my iPad).
3) Set your alarm in the other room. On the mornings that I want to work out before work, I set my normal alarm next to my bed, but I also set the alarm function on my blackberry… in the other room. It is too loud to ignore, but pleasant enough that it doesn’t scare the crap out of me… but I have to get up to turn it off, and usually (if 1-3 have gone well), I’m awake enough by the time I get to the living room that I think “oh bother, now I’m UP, might as well get moving.”
4) Little conveniences make a big difference. Lay out your gym clothes the night before. Pack your bag. Charge your iPod. Set the coffee pot. Prep your breakfast. Anything you need to DO in the morning, do it the night before.
5) Warm up your car, if applicable. Usually I start my car in my bathrobe and pjs and boots… then come in and get dressed while it warms up. The 15 minutes that it takes me to dress and caffeinate mean that my seat heaters are on and the car is toasty.
6) Try to wake up to sunlight (again, not possible at this time of year!). Sleep with your blinds open (unless safety is an issue), and with your bed facing sunrise. In the spring and summer months, you’ll be amazed what a difference this makes.
7) Up your Vitamin D. I can’t even tell you the difference that 3000 IU of Vitamin D per day has made in my life. Get your levels tested by your doctor – You are probably deficient. Vitamin D largely comes from the sun – since we hibernate all winter, and then in the summer, we’re slathered up with sunscreen, most Midwesterners are tragically deficient of this wonder vitamin, which works with our hormones in ways I can’t really even begin to understand. Just trust me – it’s good stuff.
8) Make a date. I don’t really enjoy working out with people, but twice over the past week, I’ve met my friend Mandi at the gym… we mostly just nod and wave and smile across the gym floor, and then chat for a minute or two, but knowing she is expecting me (and vice versa) helps to keep me honest.
9) Trade gym bags. If the shame of ditching out on your workout buddy isn’t enough to get you in the door, imagine how bad you’d feel if you ruined HER workout? Trade gym bags with a friend – you’ll have to show up to make sure that you both have the proper attire for your workout.
10) Visualize. Remember that you always have time for the first thing you do every day… and in doing so, imagine how amazing you’ll feel when you’re done; how proud you’ll be of what you’ve accomplished… how much more energy you’ll have throughout the day, and most importantly, that you can just go home and enjoy the rest of your night, without feeling guilty that you’re not going to the gym!
And a bonus: I always sleep about a million times better on days that I workout… which helps to ensure that I’ll get up and do it all over again tomorrow.
Plan for the day:
B: chobani greek yogurt, fiber one cereal
S: banana
L: quinoa chicken salad, vegetables w/ hummus, granola bar
S: apple, reduced fat string cheese
D: beef stew, crescent rolls, salad
Vitamin D, vitamin B12, multi-vitamin
Whole grains, dairy, lean meats, and plenty o' fruit and vegetables
100+ oz of water
Burned about 400 calories at the gym
Done and done.

Easy Like (Monday-Wednesday) Friday Morning
First "intention" of 2011 is off to a great start - I hit the gym BEFORE work Monday, Wednesday, and Friday this week -- this morning, my friend Mandi met me there, and while we didn't work out together, it was nice to see a smiling face so early (so SO so early) across the cardio floor!
Today I went to Weight Watchers for my first "official" WI of 2011... the story was a bit less rosy there. Up 2 lbs since right before Christmas. Boo hiss. BUT - I am confident that the scale will catch back up. I've busted my butt this week, eaten right, hydrated and slept well... and as a daily weigher, I am definitely familiar with the fact that an increase in exercise can, at first, cause some water retention and soreness.
On a fun note, I found a weight watchers buddy here at work - she normally goes to a meeting on Saturday mornings, but can't make it this week, so today she hoofed it to my meeting with me... and afterwards, we went for a 45 minute skyway walk.
So I should definitely sleep like a baby tonight!

3 out of 12
Woke at 5:45 and was out the door, coffee in hand, by 6:20, which is about 10 minutes later than I wanted to be... had a great workout -- 30 minutes of the "dreadmill routine of death," plus about 20 minutes of strength (machines, free weights, BOSU, medicine ball), a quick stretch, and back home to shower, eat, dress, and get out the door.
What worked:
The Learnings:
Baby steps. Just keep swimming. One day at a time. Ride the wave.
Persistance, not perfection.

PPS: A perfect example of my "Change your words and change your world" mantra -- changing my exercise ticker to count workouts rather than minutes has changed my attitude immensely -- 9 more workouts!? January just started! Piece of cake! Much better than staring down the barrel of needing to do 900 more minutes of exercise, or whatever -- in fact, I'm feeling so good about it, that last night I even hopped on the treadmill for 45 minutes, while watching The Biggest Loser. I'm not counting it as a workout... I was strolling, texting, flipping between channels, but I was going to sit on my butt and watch that show, so I might as well have been moving.
What worked:
- Setting the alarm clock on my blackberry in the other room, so that I couldn't just hit snoozer incessently
- Setting the coffee to brew last night
- Laying out workout clothes, shoes, Lifetime card, iPod, heart rate monitor, water bottle, and magazines
- Coming home to shower and eat - although this would be better if I had gotten out the door 10 minutes earlier this morning
- Did not turn on the TV before or after my workout. Didn't check email on my computer after my workout -- just on my blackberry. When I sit down in front of the TV / internet, I get sucked in.
- Ran into some unexpected traffic between my house and work, which made me about 10-15 minutes later than I wanted to be
The Learnings:
- Eating in silence and without the distract of internet / TV is nice. And keeps me from mindlessly wasting time. I got out the door faster.
- I actually took the time today to put on makeup. SHOCKER. I haven't worn makeup in... well, ever, basically. I mean, I throw on mascara and some lip gloss, and some coverup on the scar on my chin, but other than that, I am a wash-and-go girl. Can't be bothered. But I do own some high end Bobbi Brown cosmetics and brushes, and today put on a bit of tinted moisturizer, blush, etc. So I took maybe an extra 10 minutes to get ready, but the payoff is big -- I look good, and I FEEL good.
- I've been doing a lot of planning lately, and a big part of that has been making decisions rather than hoping / wishing / thinking what I want to happen. As I like to say, "Hope is not a strategy." Hope is great -- but it ain't gonna get the job done. You can do all the hoping and wishing in the world, but DECIDING to do something is where rubber meets the road.
- Change your attitude, change your words, change your world (ooh, I think I just found my new mantra!). When "I can't do this" becomes "I don't do this," you've changed the entire statement.
- Whatever it is that you think you "can't" do.. trust me, you can.
Baby steps. Just keep swimming. One day at a time. Ride the wave.

Crabby Patty
On Friday night, for NYE, I made king crab legs for the Manfriend and I -- crab legs are kind of fun, kind of a lot of work, totally delicious, very easy to prepare, quite low in fat and calories, and most importantly -- usually involve leftovers to make some killer crab cakes! So last night, I prepped them and made them for dinner tonight.
First, using my trusty meat mallet, I cracked through the leftover crab!
Then, instead of shredding it by hand, I had the BRILLIANT idea to put it in my brand spankin' new food processor! Isn't it pretty?
I diced up some celery and scallions and set aside...
And pulled out some other ingredients -- Italian style panko...
... a fresh lemon, parmesan cheese, and lemon dijon mustard...
...layered it all into the food processor...
...and gave it a whirl!
... I even poured in a tiny bit of leftover champagne from Friday night -- I was sipping it, and the mixture seemed dry, and champagne and crab seemed like a lovely combo, so why not?
Once the mix was done, I formed into balls...
...which I then formed into patties...
Crabby patties!
Spritzed with a little bit of extra virgin olive oil...
Tonight, when I got home from work (after dreaming of these ALL DAY!), I heated up a bit of oil in 3 separate pans, and got to cooking.
See how nicely browned they are once flipped?
I heated up some green beans in a small pan, and used a small baking potato and my fancy food slicer to make some "fries," which were really just ONE small potato, heated up with EVOO, salt, pepper, and garlic salt... Can you believe how much FOOD that looks like? Just one small potato suddenly looks like a whole pile of curly fries!
Gorgeous (albeit crumbly)...
And since I overpoured the salt, I threw a bit over my shoulder for good luck!
Once the crabby patties were a little bit brown on either side, I put them in the oven to cook through... if I do this again, I will need to work on my technique because they definitely didn't cook very well.
However, as "un-pretty" as they may have been, they tasted out of this world... I only wish I'd invited guests over to share them -- because I only had room for 2-3, and I didn't think they'd keep long enough since the crab was defrosted on Friday.
Again, I don't usually follow recipes so I apologize for my vague details, but here are the ingredients:
Crab (you could get lump crab if you want to make this without the expense of King crab!)
Green beans
Baking potatos
Panko or bread crumbs
Parmesan
Dijon
Celery
Scallions
Lemon
A little white wine (optional)
Salt, pepper, garlic salt, celery salt to taste
These crab cakes are butter and mayo free...

PS: My dinner might have been crabby, but I was definitely not a crabby patty today. Had a fantastically productive day at work, made great food choices, and spent 45 minutes on the treadmill tonight watching The Biggest Loser, even though today was a "rest day." It is about 10 PM and I'm about to hit the sack so I can get up and hit the gym early tomorrow morning!
